In the Plow & Hearth catalog, which I got today, there's a page of light fixtures that you can replace your recessed lights with. That caught my eye because I've never changed one, and my new house has them in the office. You "Just unscrew your old light blub, screw in the adapter, slide on the cover plate [however you do that] and flip the switch. They have a lovely selection of fixtures to choose from; I especially liked the stained glass/art deco look. They also have decorative rings to dress up your recessed lights if you want to keep them.
